Ginger Lime Sparkler

A punchy, non-alcoholic fizz built on fresh ginger syrup, lime juice, and cold soda water.

Ingredients

  • 1/2 cup fresh ginger, sliced
  • 1/2 cup sugar
  • 1/2 cup water
  • Juice of 1 lime, plus a wedge to garnish
  • Soda water, chilled
  • Ice

Method

  1. Make the ginger syrup

    Combine the ginger, sugar, and water in a small saucepan. Bring to a simmer and cook for 5 minutes, stirring until the sugar dissolves. Remove from heat and let steep for 10 minutes, then strain and cool.

  2. Build the drink

    Fill a tall glass with ice. Add 1 oz of the ginger syrup and the lime juice.

  3. Top and stir

    Top with cold soda water and stir gently. Garnish with a lime wedge.

The syrup keeps in the fridge for up to two weeks — make a batch once and this becomes a 60-second drink all week.
