Read the recipeRub the sweet potatoes with olive oil and pierce a few times with a fork. Roast at 400°F for 40 to 45 minutes, until fully tender.
Once cool enough to handle, halve the potatoes lengthwise and scoop most of the flesh into a bowl, leaving a thin border in the skins. Mash the flesh with the butter, cinnamon, salt, and pepper.
Spoon the mashed filling back into the skins and top with the shredded cheddar.
Broil for 3 to 4 minutes, until the cheese is melted and bubbling.
Top with crumbled bacon, scallions, and a dollop of sour cream before serving.
