No-Bake Peanut Butter Oat Bars

A five-ingredient, no-oven treat that sets up firm in the fridge and disappears just as fast.

Ingredients

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips

Method

  1. Mix

    Combine the oats, peanut butter, honey, melted coconut oil, vanilla, and salt in a large bowl and stir until fully combined and sticky.

  2. Fold in chocolate

    Fold in the chocolate chips, working quickly if the mixture is warm so they don't melt completely.

  3. Press into a pan

    Press the mixture firmly and evenly into a parchment-lined 8x8-inch pan.

  4. Chill

    Refrigerate for at least 2 hours, until firm, before slicing into bars.

Press hard when packing the pan — a loosely packed mixture is the most common reason these bars fall apart when sliced.
